Ross Martin Offers Fine Dining in Telluride, Colorado

Ross Martin seemed destined to be a chef from the time he was a small child. Born in Philadelphia, Pennsylvania and raised in Dayton, Ohio, Martin began experimenting with cooking as a young boy with a small but enthusiastic audience – his parents and older brother. He tried his hand at specialty dishes, American favorites and his culinary staple, “anything braised,” all by the time he was 16.

Attending college in the town of Missoula provided him with a number of restaurants to help determine his culinary path. As he took employment at Worden’s Deli and a small French restaurant named Chinook, Martin started to enjoy and appreciate the finer aspects of cuisine. He then decided to attend the French Culinary Institute in Manhattan. The nine-month program was the best experience of his life. As the program dwindled from 20 students down to four, with Martin one of the remaining, he knew this would be his calling.

Working with chefs including Andre Soltner and Alain Sailhac truly inspired the young chef, and he decided to stay in New York City to gain experience only the “Big Apple” could offer. Martin showcased his talents with acclaimed chefs, Riad Nasr and Lee Hanson at Balthazar for a year and a half, Aqua Grille for six months and even worked for free at Manhattan’s Park Avenue Café and Oceana to gain a wider variety of cooking knowledge and practices.

After two years in New York City he decided he belonged in the West, and headed to Colorado. Ross lent his considerable talent to several restaurant projects between 2000-2004 and accepted the Executive Chef position at the Chop House in early 2005.

Martin has been a featured chef at the Telluride Culinary Art Festival along with celebrity chefs including Dean Fearing, Cat Cora and Bryan Nagao. He has also participated in the mushroom cook-off event during the Telluride Mushroom Festival, and has also been featured on StarChefs.com for their “Thanksgiving Tips From the Pros.” He also appears regularly on the Fine Living Network’s “Winter Wonderland Sweepstakes” promotions.

Since day one, Martin’s goal has been to be as much an artist as a chef, and he proudly displays his creative talents at the New Sheridan Chop House.
